I have been thinking about writing a Blog...But thought what do I have to say... Then the idea hit me... Cooking.. Easy recipes that are delicious and easy!!!
The next day VIG had the blog topic of DIETS... Well I thought I better wait a while before I did this... Then a week later Goldie and Jodi were talking about swapping recipes... And then a couple of days ago there was more talk on the blog about recipes.. So I am coming out of my comfortable " Just Watching " place and I am jumping in ...

I think we need to devote a day to sharing recipes!!!
We all need help with "Oh .. What do I not want to make for dinner tonight??"

My favorite easy recipe... Is
OVEN FRIED CHICKEN

It is too easy.. No mess and it tastes like you slaved over a stove all day.. My co-workers would never believe that the chicken I brought in for lunch was actually "fried" in the OVEN..

Pre-heat oven to 425 degrees
In a 9 x 13 pan.. Glass or Pyrex is what I use.
Put 1/4 cup on Solid Crisco
1/4 cup of butter
Melt in oven..
Flour chicken
Place in melted crisco/butter mix SKIN SIDE DOWN
Baked for 30 minutes.. Turn it over bake 30 more minutes...
You have the best fried chicken without mess...
Please help me with some very delish and easy recipes...

    Great blog IBB-OMG I have heard of oven fried chicken and I used to make it with crushed cornflakes as the coating...Never have I heard of that! WOW a very easy recipe!!
    I love to cook and bake(just baked something last night) so I will be back later with some goodies! hehe

    I'll make breakfast this morning:

    fresh fruits

    assorted breads with jams/jellies

    eggs cooked to order

    waffles

    pancakes

    crispy bacon

    assorted juices

    grits for those from the South-lol
    (cheese optional)

    biscuits

    sausage gravy

    milk and the soymilk for Dreama I think it is and someone else!? lol

    Okay that's about all I can whip up! hehe

    KGRL: HAPPY BIRTHDAY!!!! SWAK ATTACK!! ;)

    IBB: Great Blog!! This is going to be a fun day! Thank you!

    I got this recipe from the other blog. It is very good and really easy.

    PULLED PORK for the Crock Pot..

    3-4lb pork roast
    1 cup brown sugar (1 1/2c for extra juice)
    1 cup Coca Cola (1 1/2c for extra juice)

    Mix Cola and brown sugar. Pour over roast. Cook on low for 8-10 hours.

    That's it!! Now I tend to "jazz" recipes up a bit..so I put the roast on top of a sliced Maui onion. I also sprinkle some garlic powder and pepper on it. And I always do the 'extra' juice. I have also tried Dr. Pepper...just as good.

    Sometimes I take the roast out of the crock pot at the 8 hour mark and pull it apart..then put it back and continue cooking for another 2 hours.

    Try it. You'll be surprised at how good it is.

    Amicus: I was thinking about the shocking kiss predicted for the las show of GA. I know you said you think it might be Callie and Hahn. But yes they did give us a teaser last night and that would take the shock factor out.

    Anyway I was thinking what would be more shocking or at least surprising. I came up with Christina and Hahn kissing. What do you think???? After all Christina has a history of sleeping with her mentors!!

    Damn I think I should be a tv writer. LOL

    I am sitting here but my mind is infertile. I can not think of a single good recipe. I guess that is the result of eating too many Weight Watchers dinners lately. I can't remember what I used to cook for my International students. I know they liked it. At least they told me so.

    Hey KGirl..turtlewoman....happy birthday! Hope you have a fantastic day! And what a great way to start your birthday....your first first! Woohoo!

    IBB...good on you! Your first blog and no longer a blog virgin. You did it! And you did an awesome job with an awesome topic!!!

    Joey...so nice of you to make breakfast this morning. I shall have fruit, pancakes and some soymilk please!

    Recipe...this is my quick vegetarian recipe that I make when I am pressed for time, which is why I make it fairly often!

    Easiest Curry in the World (or What's in the Fridge Curry):
    Stir fry some chopped up vegetables...start with onion and garlic and then just add in whatever veggies you have in the fridge. Cauliflower is always good. Carrots, broccoli, green pepper, celery seem to usually be in there too. Fill up a large frying pan or stir fry pan with veggies.

    When the veggies are tender, add in about a tablespoon of curry paste (Pataks is always good). Stir that up well for about a minute.

    Then add in a can of coconut milk (I use light coconut milk..reduces the fat content quite a bit). Cook until the veggies are the way you like them.

    This is good over brown or Basmati rice or sometime I use it as a pasta sauce..really good with penne. I have also poured it over a baked potato.

    Good and easy (kind of like me!!!)

  34. VIG - I am happy to see my good friend sharing her recipes. I think I would like to be a vegetarian especially when I think of the animals involved. I eat very little meat. However I do crave a really good hamburger every once in a while so I think I would get kicked out of the club.

    I also make pulled pork;) I do it in my slow cooker! I have a Coca-Cola cookbook and it has something similar to that recipe zona! I have tried the 1 can of coke and 1 cup of ketchup before over ribs!

    It caramelizes and makes it so good..I love your maui onion idea!
    I put onions in/on everything!!

    OMG I forgot to put out COFFEE!! Can you tell I'm not a huge coffee drinker?!lol
    SORRY!!

    I'll have to see what I can come up with for the chicken fried steak recipe! It's never been written down and it's just in my memory from the way my Mom and Aunt made it!

    Iron skillet is key;)

    OMG I just ordered photos online for the first time from CVS(right around the corner from my house-yahee) and she just called to say they're ready! WOW! LOL
    I did it about 25 mins. ago!!
    I think it was 32 photos! I got 50 free!!!!!!!!:) 18 more for another time! I'm super impressed lol

    Sorry I haven't been here lately..
    My computor was down. Finally called my server company and I guess it was out in my whole area!
    Not sure what the problem was, but I'm sure I will be calling them back to get my bill reduced! that is one thing I'm a stickler on..I don't ever pay any bill in full, if I don't get full service! Comcrap will be getting a call from me too. Some channels keep freezing up and are scrambled. I've had them out here about five times..and it still happens!

    Now the good news!!!!!!
    I Finally have my New Toilet in!! Have you heard the new flushing sound?? I love that it is all new and shiney...but they do make toilets so much smaller now! Too bad my ass hasn't gotten any smaller! LOL

    I'm not totally caught up on all the comments, so I'm out of the loop. I hope you're all doing well.

    Hope I can come up with a good recipe to post.
    Off to watch the View...Have any of you been watching that lately? I notice now how much more tense it get's when Whoopie and Elizabeth are discussing the Pres. race now!???? I just love Whoopie.

    I'm still doing the home repair stuff too, but Mr. Birdee is off getting more stuff, so I have a bit of time to finish my coffee and relax!

  41. VIG- I have eaten very healthy food since 1994 when it was discovered my cholesterol was through the roof. Now I eat mainly fruits and vegetables and a lot of tofu when I had my students. I can't wait until next Thursday when we both forget the rule about eating no rich foods. That's less than a week from now.

    A lot of people don't realize with internet, phone and cable you can get reductions for when you go on vacation!! Hope barb did that when she was in Hawaii forever! lol

  46. Paula Deen gets credit for this recipe- and it is fab. I am making it for brunch on Sunday. Since the first time I made it- it is now on the highly requested list when I do a big breakfast or brunch.

    Ultimate Coffee Cake
    (Sticky buns)

    16-18 frozen dinner rolls
    3oz butterscotch pudding mix (not instant)
    1/2 c. brown sugar
    1/2 c. pecans
    1 stick melted butter


    Put the unbaked frozed dinner rolls (I use Rhodes from a bag)in a greased bundt pan. Sprinkle package of regular butterscotch pudding mix (NOT instant) over rolls. Sprinkle borwn sugar next then pecans on top.
    Pour 1 stick melted butter over it all. Cover with damp towel or tightly wrap in plastic wrap. Let rise overnight at room temp 8-10 hours (I ususally do at least 10 hours or so)

    Bake 30-35 minutes in 350 oven.
    Cool 5 minutes then turn over on to platter and remove pan. Just pull apart and enjoy!

    Dori loved to bake, and in memory of her, I'm going to share her brownie recipe. At family get-togethers, she would bring a pan of brownies for everyone, but she would also sneak in a container of brownies just for me, because she knew how much I loved them. It was our little secret. :)

    Brownies by Dori:

    Do not use mixer.
    Bake at 350 for 30 minutes.

    Step 1: Mix in bowl
    7 large eggs
    4 cups sugar
    2 tsp vanilla
    2 cups flour

    Step 2: Melt in pan
    4 sticks margarine
    12 Tbsp cocoa

    Add melted chocolate mixture to ingredients in Step 1.

    Pour into greased & floured 15 x 17 jelly roll pan.

    Use toothpick to check when brownies are done.

    Step 3: Icing

    Use mixer.

    3 Cups powdered sugar
    5 Tbsp cocoa
    1 stick soft margarine
    1 tsp vanilla
    (Use mixer on low speed)
    A little at a time, add a small can of evaporated Pet milk while beating until the consistency is easy to spread.

    Goldie: I agree with Joey I would pass on the goat. I know over half the world eats goat but... it would be a like munching on the neighbors pet pygmies next door. Hope you are having a blast with the grandkids!

    Ok here is my Crockpot chili receipe. My Family loves it and I love it because it is quick.

    Fry up some Hamburger I do about a pound and a half. You could also use chicken or turkey.

    Open 1 large can of kidney beans and dump in the pot and 1 small can of kidney beans.

    1 small can of chili beans.

    add hamburger stir.

    1 package of your favorite chili seasoning.

    1 large can of diced tomatos.

    about 1 tsp of cinnamon and 1 tsp of nutmeg.

    Stir set crockpot on low and simmer most of the day.

    You can also add Onion, fry with hamburger or you can use tomato sauce or paste.

    I did not have tomato paste or sauce in the cupboard one day but had the diced tomatos and my family liked it better that way.

    Actually you can add just about anything you like.

    My family will finish off the whole crockpot. I rarely have leftovers of this.

  57. I should add that I do the cinnamon and nutmeg to taste and don't really measure. So it could be a little more. Maybe teaspoon and half on the cinnamon and just a pinch of nutmeg. These measurements are for dried spices.

    oooh If you want the deluxe version this is how I always had to make them for my Dad.

    Butter on both slices of bread, Peanut butter on both slices of bread and Jelly always in the middle! Gourmet!

  59. Goldie...oops..sorry to offend you with the word curry in my recipe above. How about a sweet treat instead. These are a Canadian classic and named after a city on Vancouver Island!

    The Original Nanaimo Bar

    Ingredients:

    ***Bottom Layer ***

    * 1/2 cup unsalted butter * 1/4 cup sugar
    * 5 tablespoons cocoa
    * 1 egg beaten
    * 1 1/4 cup graham wafer crumbs
    * 1/2 cup finely chopped almonds
    * 1 cup coconut

    ***Second Layer ****

    * 1/2 cup unsalted butter
    * 2 tablespoons cream PLUS
    * 2 teaspoons cream
    * 2 tablespoons vanilla custard powder
    * 2 cups icing sugar

    ***Third Layer ***

    * 4 squares semi-sweet chocolate (1 oz. each)
    * 2 tablespoons unsalted butter

    Directions:

    Bottom Layer

    Melt first 3 ingredients in top of double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut, and nuts. Press firmly into an ungreased 8" x 8" pan.

    Second Layer

    Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.

    Third Layer

    Melt chocolate and butter overlow heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.

    EASY CHICKEN AND DRESSING

    Ingredients:
    4 skinless, boneless chicken breasts
    1 box Stove Top stuffing mix
    1 can cream of mushroom soup
    1 can of milk
    1/2 cup sour cream
    Salt and pepper to taste

    Preheat oven to 350 degrees. Butter or nonstick spray a medium baking dish. Place chicken in single layer in the dish and season with salt and pepper. Prepare the stuffing mix according to directions on the box. Next combine the can of soup, milk and sour cream. Pour soup mixture over chicken then top each breast with the stuffing, excess stuffing should be placed around the chicken. Bake for 30 minutes or until chicken is done.

  65. Good morning...I will read and find something I cook around here to tell you about besides Subway, Wendy's, etc.

    I just had a quick thing I wanted to post that made me smile today. I do tell my 39 year old daughter about the blog from time to time. I had told her last week about the party for two days. She knows I like to pretend with the kids a lot so she probably thought this party was right up my alley. Anyway, we are meeting a friend for her bday lunch today and we all were texting about the time and I said, "I will be there with bells on", my daughter replied "or tassels?" It just made me chuckle.

    Ok..off for my tassel lunch :)

My biggest disappointment in an otherwise fantastic trip to Australia last fall, was that i found out just a titch too late that Hugh was with his family at the beach right next to the one that i was at and that I had decided not to visit that day. Dang!

    I am really overwhelmed today, so I will come back later with some recipes.

    Such a proud, yet sad, day at our local High School. The Day of Silence to support the Gay Student Association was met by a small group of supporters this morning to let the students know that we support those who wish to be silent and show solidarity to those who have no voice in our society.

    Unfortunately, a pastor from another town called for 1000 "prayer warriors" to come and protest, surrounding the school and tell the school district that they do not agree with Day of Silence. I just returned and seeing all that hate and bigotry in one place has drained me... especially knowing it was in my small, peaceful community.

    I am proud to say though, that I did NOT know any of those faces. He had many of them bussed in from other communities and even out of state. But still...

    I will be back later. Pray for all of us, even those with so much hate in their soul.

    IBB - Great blog......and the recipe is very similar to an oven "fried" chicken recipe that I have. The only difference is that I use Biscquick (instead of flour), pepper, seasoned salt, and grated parmesean cheese as the coating!!!! YUMMO!!!

  94. VIG - You would have been proud of me. Instead of driving to the vet to get their food and then stopping at the park and going for our walk, I walked them to the Vet's. It was great and saved gas. The only hard part was coming home was all up hill and I had their groceries to carry.     It has been a nerve wracking day at work, but it's almost over.

    Thank you all so much for the birthday wishes, it means alot~

    Gonna go to dinner with a friend to Ruths Chris for a killer steak dinner, then home as I am island hopping tomorrow to meet up with cousins that are in Maui. I am loading the motorcycle on the Hawaii Superferry and taking the leisurely way there.

    Key words there are that the hate mongers had to be bussed in. We had a similar "almost" experience here but the hate mongers wanted to spew their hatred at a military man's funeral. Their interpretation of the Bible says God wants American soldiers dead. You just have to pity people who spend their time and their lives so devoid of caring and compassion for others.

  109. This is the crock pot recipe that I came back from TX with -

    there really are TWO that my brother's MIL makes and BOTH are great...

    First one -

    frozen chicken breasts (MUST BE FROZEN)
    1 can cream of chicken soup.
    1 can cream of celery soup
    a squirt of lemon juice
    pepper, salt

    put everything in the crock pot - cook on low for 6-8 hours.

    Make yourself some rice or pasta noodles - put the chicken and soup mixture on top and serve.

    TOO EASY........
    You can use any kind of "cream of soup" that you want - broccoli, mushroom - whatever!! you like..

  110. Second crock pot dinner.

    Scalloped Potatoes and Chicken.

    1/4 cup chopped green peppers
    1/2 cup chopped onions
    1 1/2 cup diced Velveeta cheese
    7-8 medium potatoes, sliced
    salt to taste
    l can cream of celery soup
    1 soup can of milk
    3/4 whole boneless, skinless chicken breasts
    salt to taste

    l. Place layers of green peppers, onions, cheese and potatoes and sprinkling of salt in slow cooker.
    2. Sprinkle salt over chicken breasts and lay on top of potatoes.
    3. Combine soup and milk and pour into slow cooker, pushing meat down in the liquid.
    4. Cover. Cook on high 1 1/2 hours. REDUCE temp to LOW and cook 3-4 hours. Test that potatoes are soft. If not, continue cooking on low another hour and test again..

    OKAY - when I made this the first time - I used cheddar cheese, cuz I didn't have velvetta - you MUST use Velvetta - trust me!!!

    and - I used two cans of soup - made more "gravy"!! and I didn't put green pepper in it !! AND, I put pepper in mine!!!

    NOW - THIS is one of my MOST favorite things to make!!

    A Mexican food resturant in Colorado Springs - this was their speciality!! when they closed down - I was fortunate enough to get the recipe from someone that had worked there!!!

    TACORITOS!!!

    1 1/2 pound ground beef.
    1 medium onion (or use minced onion)


    SAUCE:
    1 tbsp chili pepper
    1 tsp garlic salt
    2 cans cream of chicken soup
    1 can cheddar cheese soup
    1 can of water
    1 tsp oregano
    1 tsp cumin
    2 tbsp jalapeno peppers (I leave this out!!)
    1/2 pound shredded cheddar cheese

    need flour torillas
    another 1/2 pound shredded cheddar cheese
    lettace
    tomato

    combine sauce ingredients in sauce pan, simmer 30 minutes or until cheese is bubbly.

    Brown ground beef and onion together. Add one cup of the sauce. Stir well. Roll flour torillas with meat mixture (spooned inside), cover with sauce, and top with cheddar cheese. Bake 15-20 minutes at 350 degrees.

    Serve with shredded lettace and tomatoes on top. Will make 8-10 - depending on how much meat you put in each one!!

    YUMMY and CHEESY!!!
    You can also substitute the ground beef with chicken!!

  115. ibb...the chicken was really yummy! it was very similar to the baked chicken breast that i make. the difference is that i start the chicken breast in an electric fry pan lightly browning each side in hot vegi oil, then i put the chicken in a glass baking dish and put in the oven for 30 min. this eliminated that pre-oven step. also less clean up! thanks!

  116. So here are 2 recipes that are fav's with my family.

    Messy Chicken
    1 cup brown sugar
    1/2 cup white sugar
    1/2 Karo syrup
    garlic powder to taste
    5oz soy sauce
    4lbs chicken wings and or drumettes
    Marinate overnight.
    Bake @ 275' for 2 hours/

    Crunchy Cabbage Salad
    1/2 head chopped cabbage (i use half red and half green)
    4 green onions chopped
    1 pkg Top Ramen Soup chicken flavor
    2 Tbs sesame seeds
    1/2 cup chopped or slivered almonds

    dressing:
    2 Tbs red vinegar
    2 Tbs sugar
    1/2 oil
    the ramen soup flaroing
    salt & pepper

    Combine cabbage & onion. Cover and refrigerate until serving tine. To serve, crumble dry noodles, seeds and almonds over the cabbage. Add dressing and toss.

    This is a very easy salad to take to bbq's. You can have everything chopped up and ready in zip lock baggies, and have the dressing ready in a container w/lid. You just have to mix it right before eating because the noodles will get soft after sitting for a while. SO do not make ahead of time!

    Enjoy!!!!!

  127. I've really been into vegetables lately. One of my favorite things to do is the sauteed zucchini w/ mushrooms, red onion and cherry tomatoes.

    3 small to med. size zucchini,
    halved and sliced 1/4" thick

    3 rings worth of red onion,
    chopped into 1" pieces

    1/2 cup or so of fresh sliced
    button mushrooms

    8 or so cherry tomatoes, halved

    In large saucepan, sautee zucchini and onion until zucchini is starting to brown. Add mushrooms and sautee until starting to brown. Season with healthy sprinkling of garlic salt. Add a little water and let simmer until water is evaporated and veggies are tender. Toss in cherry tomatoes and quick stir until tomatoes are warm.

  129. Hi...This is a Campbell soup recipe called Soup-erb Chicken Casserole:

    Ingredients:

    1 can (10 3/4 oz.) Campbell's® Condensed Cream of Broccoli Soup (Regular or 98% Fat Free)
    1 cup milk
    1/2 cup shredded mozzarella cheese
    1/4 tsp. garlic powder
    1/8 tsp. ground black pepper
    2 cups hot cooked elbow pasta
    2 cups cubed cooked chicken OR turkey
    1 pkg. (10 oz.) frozen peas and carrots, cooked and drained
    1/2 cup Pepperidge Farm® Herb Seasoned Stuffing, crushed
    2 tbsp. grated Parmesan cheese
    2 tbsp. butter OR margarine, melted


    Directions:
    PREHEAT oven to 400°F.

    MIX soup, milk, mozzarella cheese, garlic powder and black pepper in 2-qt. baking dish. Stir in pasta, chicken and peas and carrots.

    BAKE 20 min. Stir.

    MIX stuffing, Parmesan cheese and butter. Sprinkle on top. Bake 5 min. or until hot.

    Serves 8.


    I tried it this week and it was good and my husband liked it too. I made it in the AM and stuck it in the oven that evening.

  132. Hi everyone! Just got back from the movies with iteach! We had a blast and the movie was very funny!

    I used to LOVE to cook, but now I am more like "want to sleep" and just open the freezer! Since it's just Katie and me, it's just as cheap to eat out (and we have some great deli's that have very healthy choices). Besides, Katie eats like a bird!

    I think I finally got overwhelmed with life and found cooking not very rewarding. You spend a lot of time preparing and then it's gone! There's nothing to show for it but dirty dishes (and an ever expanding waist band, in my case)!

    Everyone is making me hungry with their recipes. Now if ONLY someone could COOK for me! ; ) I must look for that quality in a man!!! (Bruce never cooked and couldn't even boil water)!

  134. Jennifer: Years ago I was getting over some surgery and stayed at my daughter's house. She was on WW and cooked all the meals, counted the points and made a variety of things. I found it was easy to be on WW with someone cooking FOR ME. I agree with you...if someone could just cook. My husband makes hot dogs. It's kind of like going to the grocery store..I can stand it but I want someone to carry them in the house for me and then put them away!! Haven't found anyone willing yet!!

    APPLE CRISP
    > Line greased baking dish w/ 5 or 6 C apples (peeled and sliced)
    > Mix together:
    > 1 C flour
    > 3/4 C sugar
    > 3/4 t salt
    > 1 t baking powder
    > Add 1 unbeaten egg and mix w/ dry ingredients until flaky
    > Sprinkle over apples
    > Melt 1 stick butter and pour over topping mixture and sprinkle w/ cinnamon
    > Bake @ 375 * for 45 minutes
    > *this makes a small square baking dish. I double the recipe for a 9x13 cake
