Recipe Share...

I thought maybe we can all share a favorite recipe!

Here's mine, it's easy, and is nice to serve cut up for appetizers!

Junk Bread

1/2 stick butter
1 loaf French bread
1 med. onion, chopped
1/2 bell pepper (any color), chopped
3 cloves garlic, chopped
1/2 c. black olives, chopped
1/2 c. green olives, chopped
1/4 c. jarred jalapenos, chopped
1 lb. pre=cooked shrimp, chopped
1/2 c. mayonnaise
8 oz. shredded mozarella

Saute onion, bell pepper, and garlic in butter until butter is absorbed and veggies are wilted.  (If too wet, strain off excess moisture).

Remove from heat.

Stir in olives, jalapenos, and shrimp.  Add mayonnaise and stir.

Cut French bread 1/2 lengthwise.  Drizzle with olive oil.  Smear on shrimp/veggie mixture.  Top with cheese.

Bake at 350 until cheese melts and bread toasts, 15-20 minutes.

Mixture can be made ahead and refrigerated.

Morning glories,

I posted an update on FB about Eva. She has had her feeding tube and PICC line removed and is alternating between a bottle and trying to learn how to breast feed. She is gaining weight everyday. As soon as she can eat a certain amount at each feeding to maintain her fluids it looks like we might be able to bring her home.

A physical therapist assessed her yesterday but it was inconclusive as she is just too young. They said more will be known about any development issues at 2 months. The main issue right now is strengthening her neck and throat muscles and they gave exercises to help accomplish this.

She will see the neurologist again on Feb 1 and will be assessed again at 2 months by the PT.

The neurologist will let us know at that appt. whether or not she will have to continue the anti seizure meds. Right now she is still getting them once a week.

So keep praying and sending good vibes. She is improving but we are still in wait and see mode. :)

She is a beautiful baby and looks quite a bit like her big brother.

Afternoon Dianne, Bebbi, DeeDee and Lynn D!

My favorite recipe is...I don't know. If you're talking about a meal recipe I don't think I have one. I am a very fussy eating. I make a lot of pasta (just hamburg, tomato soup, oregano, basil and garlic powder with whatever pasta I have on hand)and frozen pizza.

However, for breakfast I like to fry up either bacon or sausage (cut small), heat up some hashbrowns until almost done then throw them in with the bacon or sausage (drain most of the fat off). Fry this for a few minutes then add beaten eggs and grated cheese. Have a nice big cold glass of milk with it. Yummy!! Now you all know why I am as big as I am.

Happy Thong Thursday everyone!
I will have to get back on my fave recipe. I have a DDS appmt soon.
It has been snowing here and I am still nervous about driving since my fender bender. Mr Mary said he would drive me to the apptmt. I got my jeep back late Tuesday so I was on the run all day yesterday. I had a list a mile long and the roads were dry.

LynnD,thanks for the update. I am so glad little Eva can go home! I will keep praying for her full recovery. How is your daughter doing?

Bebbi,humpft, you didn't mention that your dream was not just about ME! LOL!!

Shirley, that is exactly what my son likes to eat! I personally like my ingredients separated until they hit my stomach lol!!

EBJ Your recipe sounds yummy. Thanks for sharing it and for writing the blog.

SUPER EASY APRICOT CHICKEN

Place 5-6 oz boneless, skinless chicken breast on a 12 inch square of aluminum foil.

Place 1 Tbsp apricot preserves on chicken breast.

Place 1 tsp dijon mustard on chicken breast. Mix into preserves and spread mixture across top of breast.

Sprinkle breast with paprika, salt and pepper.

Join edges of aluminum foil and fold edges together, creating a well-sealed packet (not too tight against the chicken as there needs to be room for heat to circulate).

Place packet on cookie sheet and cook at 350 for 25-30 min. (I prefer 30). You can make as many of these as you need but only one breast per packet. Very, very tasty.

I make soup. Veg, stock and herbs. Just raid the produce department and throw it all in a pot. Add some Parmigiano, and dig in.

EBJ...your recipe sounds delish!

I can't think of a favorite one I make. I like to make garlicky pasta with shrimp or chicken. And I like to make a variety of chicken dishes.

Ohh, I know...roasted veggies.

Asparagus, green beans, cauliflower, zuchini, sqaush, red potatoes, cherry tomatoes, red onion chunks, brussel sprouts and peppers. I lay them out on cookie sheets that were sprayed with olive oil Pam. (I use multiple sheets so each one has veggies of the same size on it). Then I spray the veggies with the same Pam. In a baggie I put in garlic powder, onion powder, salt, pepper, parsley and a little teensy bit of chili powder and shake it all together. Then I sprinkle it over the veggies and toss them around the pan and bake them in a HOT oven. I flip it all half way thru. The trays with the smaller veggies come out first. OHHH, soooo good!

Work was calm today. The bitch and I avoided each other. She usually parks her car in front of my window and comes in my door, but today she parked at the other end of the lot!

My boss did go to her boss this morning, but I never heard anything.

I was nervous going in, but it was ok.

I didn't share this last night, but on the way home I was driving down the 2 lane road to get to my house. I looked to the right and there was a herd of deer running down the side walk! There had to be 10 of them. There was one ginormous one about 2 deer lengths ahead! She kept inching closer to the road. I was honking my horn to try and scare her away from the road. I knew it wasn't gonna be good, so just as I stopped she darted in front of my car and ran across the street. She was literally inches from my bumper! A fricking tick could have landed on my bumper!

Between Brenda and Bambi, it was a B of a day!!!

DEE DEE...you reminded me of a story about the Bitch. Last year we all got new office chairs and new carpeting. Since the carpet was new, they made us all have those plastic mats under our chairs. One afternoon I heard a THUMP. The bitch went to sit down and her chair had rolled away and her double wide ass landed on the floor!

i was going for real food....but decided on dessert instead~

FAMOUS Chocolate Refrigerator Roll

Prep Time: 30 min
Total Time: 4 hr 30 min
Makes: 14 servings

Ingredients:
2 cups whipping cream
1 tsp. vanilla
2 tbsp. sugar
1 pkg. (9 oz.) FAMOUS Chocolate Wafers

Preparation:
Add vanilla and sugar while beating cream with mixer on high speed until stiff peaks form.
SPREAD 1-1/2 tsp. whipped cream onto each wafer; stack, then stand on edge on platter. Frost with remaining whipped cream.
REFRIGERATE 4 hours. Cut into diagonal slices to serve.


I love this puppy.....the whipped cream softens the wafers and it's just nasty yummy~

Sopa (or Spanish Rice)

1 cup rice
1 small can tomato sauce
2 chicken bullion cubes
1 clove garlic chopped
1-ish tbsp vegetable oil
2 1/2 cups water

Brown rice in oil. When you think it's browned enough, do it a little more. Once browned, add can of tomato sauce. (watch out...it'll sizzle!) Add water, bullion cubes, and garlic. Simmer covered for 15 min. Feeds four. When my older son is home, I double it.

Chicken fricassee recipe with dumplings.
Ingredients:

* 4 to 6 pounds chicken parts(I only use breasts)
* 1 large onion, peeled and sliced
* 1 cup chopped celery with leaves
* 1 tablespoon salt
* 1/8 teaspoon pepper
* 2 1/3 cups water, divided
* 1/4 cup all-purpose flour
* Dumplings, below

Preparation:
Paprika Dumplings

* 2 cups all-purpose flour
* 1 tablespoon baking powder
* 1 teaspoon salt
* 1/4 teaspoon paprika
* 2 tablespoons shortening
* 1 cup milk

Place chicken parts, onion, chopped celery, salt, pepper, and 2 cups water in a Dutch oven or large kettle. Cover and bring to boil; reduce heat and simmer for 45 minutes, or until chicken is tender. Remove chicken from broth; set aside until cool enough to handle. Pick meat from bones. Strain broth into a 4-cup measure; add water(I use milk) to make 4 cups. Press vegetables through sieve or through food mill into broth. Return broth to the pot and bring to a boil. Stir about 1/3 cup water into the 1/4 cup flour to make a smooth paste. Gradually stir the flour paste into the hot broth. Continue cooking, stirring constantly, until thickened and bubbly. Return chicken to pot; heat to boiling over medium heat. Prepare dumplings. Sift flour, baking powder, salt, and paprika into a mixing bowl; cut in shortening. Stir in milk just until dry ingredients are moistened. Drop dumpling batter in about 6 to 8 portions over chicken. Cook, covered, for 20 minutes. If desired, sprinkle dumplings with additional paprika and chopped parsley. Chicken fricassee serves 6.

Chicken and Cream

6 thighs
3 slices onion chopped
1 pint whipping cream
1 pint water
2 chicken bullion cubes
salt and pepper
1 tbsp corn starch
1/4 cup milk

Throw (not literally) the chicken in a pot and salt and pepper it. Add onion. Once chicken is brown, simmer with cream, water, and cubes -- do not boil. Once warm, put in oven for 1 hour at 350 degrees. Remove chicken and the nasty grease on top of cream. Thicken cream with mixture of 1 tbsp corn starch and 1/4 cup milk. Serve over steamed rice.

Shortbread Cookies

2 sticks butter
1/2 cup sugar
2 1/2 cups flour

Mix well. Spread on small jelly roll sheet and pack down hard...wooden spoon works well...or spatula. Bake at 300 degrees for 45 min or until golden brown. Sprinkle with sugar and cut into squares while hot.

lmbo Mary~ I have an argument with an Argentinian all the time! Sopa is rice where I come from....but it's soup where she comes from! So when we were both in Guadalajara, she asked a teacher there what sopa was, and she looked at Ana funny and said, "Rice!" with a duh look on her face! I just smiled~

Pokes head in.....waving a wing at everyone!! Crazy week here in WESconsin. My friends Grandma passed, so I'm working her shift today, so I'm in the middle of 6 in a row. CRAP!!!
